Synopsis

The text includes a broad-ranging discussion of traditional Japanese dietary culture and dining customs, addressing specific foods, drinks, seasonings, condiments, and dishes as well as seasonal principles, regional specialties, and more. The appendixes include a Q&A section on table manners appropriate in different dining situations; a quick-reference table of English ingredient names; notes on methods of cooking, utensils, and tableware; and a section on expressions, including onomatopoeias, used to describe flavors and textures.

About the Authors
Naoki Kameda (1943–) was born in Yokohama. He completed a master’s degree in the College of Commerce at Nihon University in 1969, and subsequently earned a doctor of commercial science degree at Doshisha University, where he is now professor emeritus. His field of specialization is international business communication. He is a counselor to the Japan Business Communication Association.

Yukie Aoyagi completed her advanced degree in the Graduate School of Commerce at Waseda University. She is a lecturer in the Institute of Synoptic Studies of Language at Seitoku University, and a director of the Japan Business Communication Association. Her fields of specialization are business English and business communications.

John Martin Christiansen (1954–) is president and CEO of Leopard Corporation. He completed advanced degrees in international finance and marketing at Washington State University. He is the head of six English conversation schools in Osaka and also serves as an English staff training instructor for individual businesses.
